Vietnam Prawn Curry

Serves 4
Vietnam Prawn Curry

Ingredients:

2 tablespoons vegetable oil
2 cloves garlic, finely chopped
12 king prawns, cooked
1 onion, sliced
1 medium zucchini, sliced
½ green capsicum, seeded and sliced
½ tablespoon green curry paste
1 cup coconut milk
1 teaspoon cornflour
1 tablespoon water
1 teaspoon sugar
1 tablespoon fish sauce

To serve
Coriander leaves and steam rice

Method:

Heat oil in pan. Add garlic and prawns and stir-fry for 2 minutes. Add onion, zucchini and capsicum, stirring for 2 more minutes. Remove from stove.

In another pan, place curry paste and stir constantly for 1 minute. Add coconut milk and bring to the boil. Mix cornflour with water and add sugar, fish sauce and prawns with vegetables. Garnish with coriander leaves and serve with steamed rice.
